Grilled Steak with Parsley & Loccatelli Cheese

While I didn’t get to spend any quality time with my Dad yesterday for Father’s Day, I did grill a steak to celebrate between states. My Dad taught me to grill as a kid. I was always in charge of starting the grill and allowing it to heat before we started cooking. To me, grilling is more of an art than a science. It requires patience and some intuition. Knowing when to flip. when to wait or when it’s cooked to perfection. So, I’ll say he taught me those skills too.

This steak recipe is so easy and refreshing but has an interesting bite from parsley, acidic and sweet lemon plus a nice salty bite from my favorite locatelli cheese. It’s perfect for a casual day of cooking solo or with friends.

Grilled Steak with Parsley & Locatelli Cheese, Bon Appetit Magazine

  • 1 NY Strip Steak 
  • tablespoons olive oil, divided, plus more for drizzling
  • Kosher salt and freshly ground black pepper
  • cup fresh flat-leaf parsley leaves
  • 2 oz. Locatelli cheese, shaved
  • 1 tablespoon fresh lemon juice

Rub steak with 1 tablespoon oil and salt & pepper. Prepare a grill for medium-high heat; oil grill grate. Grill steak to desired doneness, 5–7 minutes per side for medium-rare. Let rest 5 minutes before slicing against the grain.

Meanwhile, toss parsley, cheese, lemon juice, and remaining 1 Tbsp. oil in a medium bowl; season with salt, pepper, and more lemon juice, if desired. Serve steak topped with parsley-cheese salad.
